Eggs Benedict

I absolutely love eggs benedict.  Whenever we eat breakfast or brunch somewhere that offers it on their menu, I will order it.  My favorite local restaurant that offers brunch on the weekends is called Grille 29.  They serve a crabcake eggs benedict that is to die for.  We also have a local bakery, Edgar's Bakery, that serves a similar version.  I most recently had it while staying at the Opryland Hotel.  While Brad was off work during the holidays, I really wanted to try making it myself.  Unfortunately we never got around to it.  So a few weekends ago, I decided I wanted to make it, so I bought all the ingredients and attempted it.  I found the recipe on Food Network's website.  I had never made poached eggs before, so this was definitely a new adventure.  I also cut the recipe in half.

Taco Ring Recipe

I LOVE Mexican food!  Brad can attest to this.  He isn't the biggest fan of it, but he has learned to like it more.  When I was pregnant with Melody, we ate at Taco Bell more times than I can truly count.  I think since I had Melody, he has only been there once with me!  I still love it and go when I get a chance, however.  Anywho...because Brad isn't the biggest fan of Mexican food, I try and mix it up.  Our friends make a taco ring every now and then during Walking Dead gatherings, so I decided to try making it as well.  We both love theirs, so we new we would love it.  It is super easy to make and really yummy and cheap!  Check it out below.

Spicy Lemon Baked Chicken

I rarely just come up with a recipe all on my own, but one day last week I decided to do just that.  We had two chicken breasts, and our original intent was to grill them.  However, I decided I really wanted some form of baked chicken.  Below is the recipe and instruction.  Brad said this chicken has a kick to it, especially after a minute or two after eating it.  You can see for yourself however!

Cheesy Chicken Casserole

Cheesy Chicken Casserole is a really easy crockpot recipe.  I found this recipe in my Better Homes and Garden Cookbook.  I changed up a few things, but I primarily kept the basic ingredients the same.  See below!

Potato Soup

Brad's aunt suggested this recipe to us.  She found it online, and it is super easy and really good.  We have a crock pot that will go into "keep warm" mode which allows us to cook this on work days as well!  Enjoy!

BBQ Sauce

This is a simple BBQ Sauce that can be used for almost anything.  It is easy to make and most of the ingredients can be found on hand without making a special trip to the grocery store!

Spicy Parmesan Zucchini

We love zucchini, so when I went to the beach a few weeks ago I had to get some at the farmer's market.  The recipe below is perfect for fresh zucchini, but it could probably work for frozen zucchini if it is nice and thawed.
