Cheesecake Balls

I sort of came up with this recipe on my own.  I wanted some easy cheesecake, so I researched some different quick cheesecake recipes.  That is when I ran across cheesecake balls.  I couldn't find a recipe I loved, so I combined a few to get what I wanted.  Check it out below!

Cinnamon Sugar Muffins

Brad LOVES sugar.  And until recently, it was a major part of his diet.  Neither of us really thought much about how much sugar we had in a day.  Well in late November, Brad was diagnosed with type 2 diabetes.  We weren't super surprised, but it was still disappointing.  Well the point of all that, is this was an amazing recipe find prior to his diabetes.  It was an easy muffin to make at home, and it was delicious!  Unfortunately this aren't muffins I will be making again anytime soon [unless I come up with a sugar-free/low sugar recipe!].  But if you love cinnamon and sugar, try these!  Plus they are Pioneer Woman...

Chicken Parmesan

The first time I really had Chicken Parmesan was at Disney World at Tony's Town Square.  It was really good but really heavy for park food.  Well I have yet to try and make it at home.  One day I was watching the Food Network at lunch, and The Pioneer Woman made a semi-quick version that I decided to try.  Of course, she is able to make it in 16 minutes.  I am certain it took me longer.  But I don't remember it taking a super long time.  I just generally hate frying things because it makes a mess and seems to take longer than planned.  Plus I had to get chicken because I didn't buy the recommended chicken tenders.  It was really good, however, and I would make it again for sure.  It doesn't freeze well though.  That is the only downfall.

Tomato Soup

So I really want to like tomato soup.  I love lobster bisque, and while they aren't the same, there are some similarities.  I also LOVE tomatoes.  So it would make sense I would at least LIKE tomato soup.  Nope.  I throughly dislike it.  I keep trying to find recipes to make me love it.  I thought I finally found the one.  I haven't made a Pioneer Woman recipe that I hated.  So I thought why would I hate her tomato soup.  Well I didn't hate it, but it will truly be a side item to my grilled cheese, ha!  Brad, however, did really like it.  So I wanted to at least share it for those that do like tomato soup.  It makes A LOT!  So plenty for future meals!

Mexajita Chicken

I found this recipe on the Food Network website while looking for some different crockpot recipes.  Crockpot is an easy way to fix a lot of food without a lot of effort.  This also goes perfectly with Mexican cornbread!!

Beef Enchiladas

These beef enchiladas are fairly easy to make, and a nice variety from the usual chicken enchiladas that we make.  My biggest complaint is that I feel like there isn't enough meet for the shells.  I also bought WAY too big of shells.  I think I bought burrito shells, but I should have purchased fajita ones.  Other than that, these are really good.  I would definitely make these again.

Strawberry Oatmeal Bars

Melody loves strawberry muffins and strawberry pop tarts.  I found this recipe on Pioneer Woman's website.  I thought it sounded perfect to try with Melody.  Well I learned a few things from making this recipe.  One...a fork is not the same as a pastry cutter.  I have since bought a pastry cutter!  Two...giving this to a kid is SUPER messy.  Crumbs EVERYWHERE!!!  It was still a hit with her though!

Chicken Enchilasagna

Forgive the unpleasant picture above.  I promise there is really no pretty way to take a picture of this dish.  It was really good but really weird.  When you see it, you expect lasagna, but then you bite into it, you taste a weird Mexican combo.  Don't get me wrong, it was still tasty.  You just have to get past the appearance!

Roasted Tomatoes

Our neighbor gave us some fresh tomatoes from her garden this summer.  She gave me so many I had to find something to do with them before they all went bad!  So I decided to roast them for a side item one night to go along with our dinner.  Below is the recipe I came up with.

Cream Cheese Sugar Cookies

I found this recipe on Pinterest a while back.  I happened to have all of the ingredients on hand, so I decide to fix them one day for Brad.  He loves cream cheese anything and sugar cookies, so it only made sense.  They were super good, but I had to like quadruple the frosting recipe to cover all of the cookies.  Check it out below!

Chicken and Bacon Potatoes

I found this recipe in the Family Circle magazine.  It is from the April 2016 issue, but I didn't make it until recently.  I got really behind on reading the magazines (ha!).  Anyhow, this recipe looked really fascinating and easy.  It really was easy to make, and it was really good.  I will definitely be making this one again!

Squash Salad

I found this recipe in one of my Family Circle magazines.  The only reason I noticed it was because I wanted to try the chicken recipe attached to it.  Then I noticed the chicken recipe also included a squash salad recipe.  Check it out below.

Taco Salad

Is it weird to see a recipe on a day other than Friday?!?  Well this really isn't a recipe so to speak.  The pictures speaks for what the recipe is.  But I did want to share it because it was really yummy nonetheless.  I found this "recipe" on Pinterest.  You can customize it anyway you want.  The base is lettuce, then the toppings are up to you!  I added avacado, sour cream, salsa, taco meat, cheddar cheese, and green onions.  I lined it all up nice and pretty, then I mixed it altogether to eat!  Yummy!

Tater Tot Pie

So many months ago, I saw this delicious looking recipe being made on the Today Show.  I used to get a lot of my recipe ideas from the Today Show.  These days I don't watch the Today Show quite as frequently.  We would watch it a lot at 9 am, but when they replaced Today's Take with Megyn Kelly Today, I stopped watching that hour altogether.  I gave it a chance, but I didn't care for the setup.  Anyhow, I decided to make this recipe after seeing it, and I really enjoyed it.  My only complaint is I didn't care for how the tater tots reheated for leftovers.  I think this is a great dish to serve to a larger family or gathering.  Brad ate the leftovers without complaint though.

Donut Ice Cream Sandwiches

I wanted a yummy dessert one evening, and I saw in a Parent's Magazine where parents would combine different things to make "sandwiches".  I decided to make our own ice cream sandwiches.  It was super easy to do, but it does take a bit of time to set in the freezer.

Bellpepper Boats

I have been wanting to make stuffed bell peppers for quite some time.  We even have passed by some at Costco that we considered buying, but we always talked ourselves out of it.  I found this recipe, and I decided to give it a try.  I liked the idea it wasn't whole bellpeppers but little "boats".
