Cheeseburger Stuffed Bellpepper

Stuffed bellpeppers always look amazing to me. I would see them at Costco, and I would always want to get them. But it never made sense to buy them from Costco because there were way too many in a package for us to eat. I have made something similar called bell pepper boats. They were decent, but I am not a huge fan of cooked bell peppers. I am not sure why I made the stuffed bellpeppers for this reason. But the filling was actually pretty good. And it is fairly healthy. Brad loved the entire thing. So if you like cooked bell pepper then this will be for you. The only thing I left out of the original recipe was the pickle relish. Brad hates pickles so I knew this was not an option. Next time I would also leave out the mustard. It was overpowering throughout the meal. But we also aren’t huge mustard eaters.

Balsamic Chicken

I love one pot meals, but they are hard to do now with Brad having diabetes. Most one dish meals are full of carbs, or just aren’t good at all. So when I ran across a meal with chicken and asparagus, I thought I had to try it! I wasn’t too fond of the tomatoes (although Brad liked them), so next time I might try some squash or another non-green veggie.

Mini Cheesecakes

I needed to make a dessert to take to Emily and Justin’s one evening for board games. I wanted to do angel food cake, but I couldn’t find any. So I decided to whip up a semi healthy dessert using things I already had at home.

Salisbury Steak

I found this yummy Salisbury steak recipe on Pinterest a while back. I have made Salisbury steak before, but this is probably the best I have ever made. And the gravy portion is to die for. Pair it with mashed potatoes, and yummy!!!

Ranch Dressing

Not too long ago, I wanted to make some dipping sauces for my leftover Red Robin. You may have seen the campfire sauce I made that same day. I then decided to make some ranch dressing to go along with it. I used the recipe I found online as a basis, but I did make it my own because I didn’t have all the ingredients. I also would make a few changes in the future. Check them out below.

Shrimp Scampi

I never think about cooking shrimp at home for some reason. I have made shrimp scampi a few times though. Publix had shrimp on sale a few weeks ago, so I decided to make it again. Here is the recipe I use.

Campfire Sauce

A few weeks ago I bought home some leftover Red Robin. I rarely eat them myself because I hate reheated fries. And usually I just let Brad take the leftovers. Well he was out of town, so it was all me. We had some frozen fries here, so I only took home the chicken. Well after making my leftovers for dinner in the oven, I realized that I didn't have any dipping sauces. And I love their campfire sauce and ranch…campfire is for fries and ranch is for chicken. Well I wanted to try and recreate it. I found so many conflicting recipes online, and then as I went to cook the fries I realized Red Robin gave me the recipe on the back of the fry bag! So here it is for you! Straight from the Red Robin fry bag!

Boiled Eggs

So I love boiled eggs. I like them alone, in salads, to make different salads, to make deviled eggs, etc. But I despise cooking and peeling them. They are always slightly undercooked and impossible to peel. Well I did some research, then I combined a few methods online until I found something that worked for me.

Peanut Butter Cheerios Clusters

In an effort to find a healthier snack for Melody, I decided make some cheerio clusters. They were filled with everything Melody loved, so I thought for sure they would be a hit. Unfortunately, Melody didn’t care for them. I thought they were delicious, but I couldn’t finish them all myself before they went stale. Oh well!

Grilled Zucchini

We were grilling steaks a while back, and I had some zucchini I bought for a side dish. We make zucchini a lot but I wanted a new way. So I last minute googled a recipe to grill zucchini. I knew I could just throw them on the grill, but I wanted a good marinade or seasoning. Check it out below.

Brussel Sprouts

So I am weird and LOVE brussel sprouts.  Brad always tells me how much he hates them.  Well for Mother's Day him and Melody gave me the new Magnolia Table cookbook.  In it was a yummy sounding recipe that Brad agreed to try.  I have recently found out I have a pork allergy, so I did use turkey bacon instead of regular bacon.  I didn't care for the turkey bacon in this dish, so next time I would leave it out.  But I am certain regular bacon would be amazing in it.  I also adjusted the recipe a lot for what we like.  So below is MY version.


Creamy Lemon Chicken

Creamy lemon chicken is a name Brad and I made up for this recipe.  This is a recipe he actually got from his mom, and I am not sure of her source.  We don't make it enough because I honestly forget about it.  We tend to get in a rut and just eat the same things over and over.  But this really is a great chicken recipe to have in your back pocket.

Garlic Bread

We eat bread with most meals, so I have been trying to find some new ways to make it besides simple rolls.  I decided to try and make a simple garlic butter spread that I found online.  It's very quick and easy, and you are likely to have most ingredients on hand.  My only recommendation would be to reduce the parsley at least in half.

Gourmet Grilled Cheese

We have been trying to find a good meal to have during the week that Brad can eat before mowing the grass.  We didn't want something super heavy, so Brad came up with a fancy grilled cheese.  We loved the old gourmet grilled cheese from Atlanta Bread.  They no longer have it though.  So I googled and combined a few recipes to come up with the one below.  

Boiled Potatoes

Growing up, I remember loving boiled potatoes.  And my mom still makes them on occasion.  I don't think I have ever really made them for Brad.  So we had some red potatoes leftover from when I made roasted potatoes, so I decided to make some boiled ones.

Pizza Sauce

I love pizza, but I am not the biggest fan of making it at home because I haven't found a pizza sauce I love.  Brad likes PizzaQuick but not me.  So I found this pizza sauce recipe online and decided to give it a try.  It still isn't amazing, but it is much better than PizzaQuick!  And you should have most of the ingredients in your pantry.
