Taco Casserole

A friend of mine on instagram introduced me to Joy Filled Eats. I went through their website and found SO many recipes I want to try. But one that we almost immediately tried was the taco casserole. And it was AH-MAZING! It is super easy to make, and even easier to make ahead of time and freeze. It is a definite meal we are adding to the rotation and a must for entertaining! We double this recipe for a group.

BBQ Chicken Casserole

I found this BBQ Chicken Casserole on Pinterest a while back. I had to remove a few of the ingredients to satisfy both Brad and I, but I think the recipe I used turned out really well. Brad was really nervous, but we were both surprisingly impressed and enjoyed it.

Zucchini Pizza

So a friend of mine posted this recipe on her social media a few weeks ago. It looked so good, I knew we had to try it. We absolutely love it, and we make it most weekends for lunch. It’s super easy and healthy too!

Parsley Lemon Butter

While at Disney in February, I had an amazing steak at Chefs de France. It was cooked perfectly and topped with a lemon and parsley butter sauce. Man it was great. So when we cooked steak again back home, I decided to make my own. I actually keep meaning to make it for other dishes and always forget. The key is to make sure your butter is soft!

Cut Out Sugar Cookies

Brad is a sugar cookie lover in our house, but I have cut back on making them since he is diabetic. Well I still make them for special occasions, and currently I am making them to test icing them for Melody’s third birthday coming up. Well this recipe below is my favorite for making cut-out cookies. This website also has an icing recipe, but I will include that later once I perfect mine, ha!

Roasted Green Beans

Brad’s mom made us these green beans many months ago. They were really, really good. So good, Brad requested these instead of green bean casserole for Christmas dinner! Well they are super easy to make and super tasty. She sent me the recipe, and now I am sharing it with you! Enjoy!

Orange Chicken

So I have to be honest, finding new healthy recipes are getting harder and harder. I need food to stay full longer and not feel hungry an hour later. Well I found this recipe and it sounded amazing. I love Asian food, but it is hard to find healthy food because most of what I love is fried. This sounded perfect. BUT I must admit, it doesn’t have enough flavor to me. I may try it again, but use something other than orange juice. We will see.

Splenda Sugar Cookies

So since Brad was diagnosed diabetic, we have altered our way of living. I have also been trying to general eat better and lose weight myself. Well we have tried to find lower carb food and desserts. One alternative we made was splenda sugar cookies. Personally I do not like splenda. I prefer sweet and low. I think every person has their preference on sweeteners though. Anyhow, we made these and Brad and his family really likes them. I will say, they are not THAT much lower in carbs than the real thing though. They are probably far less in sugar, but our doctors said to focus on carbs not sugar. Anyhow, Brad does like these, so we will make them again I am sure.

Salsa Fresca Chicken

I found this recipe one night while skimming Pinterest for some dinner ideas. I liked that it was a chicken dish, but it was something different and pretty easy. Brad claims it was his idea (Remember salsa fish?), but this is different and better in my opinion. Next time I would make fresh pico de gallo and invest in the cilantro. Brad isn’t a huge fan so I didn’t get any. But it was definitely missing it.

Cashew Chicken Bake

A while back, Brad traveled out of town for a week for work. I always try to go out or cook things he normally would not eat. Well one thing he absolutely hates is peanuts. Well any form. So I found this cashew chicken recipe. It seemed like something I would never cook for him, and it seemed like something I could eat on for more than one night while he was away. I did leave a few things out as always though.

Turkey Sausage Balls

Since I am allergic to pork, I had to find an alternative to the classic sausage balls I made. I decided to try turkey sausage. I wasn’t a fan of ground turkey as a substitute in things. I always preferred ground chicken. But I like turkey bacon, so I thought it was worth a shot. And to be honest, I actually prefer it to pork sausage. It isn’t as greasy and has a much better overall taste. If you google turkey sausage ball recipes you find a lot of different ones. I kept mine simple. I simply used the classic recipe and just switched out the sausage. And to make it a bit less in calories, I also use fat free cheese. However, I do NOT add tabasco sauce to it anymore! I honestly forgot I did before, ha! So if you are looking for something a bit healthier, or just want to try something new, try this!

Healthy Jalapeño Poppers

In an effort to eat healthier, I have given up a lot of yummy goodness. But I am attempting to find a way to make things a bit healthier for me. One thing I made a take on was jalapeño poppers. This recipe makes quite a bit. I made half of the recipe and it was enough for Brad and I to have at lunch and dinner on a Saturday during football season (obviously with other appetizers). They can get a bit spicy, and they aren’t perfect. But they scratch that itch for me!

Poppyseed Chicken

The first time I had poppyseed chicken was when we ordered from Alabama Bliss. I wanted to remake it, but we had quite a bit of leftovers to work through in our freezer first. I finally made it a few weeks ago, and I really liked how it turned out. I think what we had from Alabama Bliss was much better, but I feel like foods are almost always better when someone else makes it, ha!

Cracker Barrel Biscuits

One afternoon Brad was craving Cracker Barrel biscuits. I offered to make regular biscuits, but those were not what he wanted. So a few days later I went to the grocery store and decided to get some buttermilk and try making them. I personally don’t have a biscuit preference and can’t tell a huge difference, but Brad can. I found a recipe online to try. They turned out great, especially according to Brad. See below!

Chicken Lettuce Wraps

So back when we used to go to PF Changs (aka before Melody), I loved ordering the chicken lettuce wraps. They are fairly healthy (in comparison to the other menu items), and they taste amazing. Brad hates them though. Well one week when he was out of town for work, I finally decided to try and make them at home for dinner. They were great! They were also much easier to make than I expected. I may try making them again and freezing them for lunches. I have made some before, but they weren’t near as good as these.
