Blackened Fish
Since blackened fish is so easy, I decided to also incorporate our entire meal as part of the recipe this week.
Ingredients
- Tilapia, we used 2 pieces
- Old Bay Blackened Seasoning
- Approximately 2 tablespoons of butter
- Frozen Corn
- Brown Rice
Instructions
Step One: Start cooking rice. Our rice took approximately 15 minutes. 5 minutes to boil, 5 minutes to simmer, and 5 minutes to absorb the water.
Step Two: After starting the rice, I lather the fish with the blackened seasoning. There are instructions on the seasoning as to how much, but I just lather it until it is completely covered.
Step Three: Put one tablespoon of butter into a large skillet on medium heat. Once melted, add the fish. At this point, the water for the rice should be boiling and you should let it simmer for 5 minutes
Step Four: In a small saucepan, add one tablespoon of butter and about 1-2 cups of frozen corn over medium heat.
Step Five: After 5 minutes flip the fish. Pull the rice off of the heat and cover.
Step Six: Stir the corn. When warm and butter is melted, turn heat to low.
Step Seven: Fish is done when it is white and flaky. To serve, I put about two spoonfuls of rice on the plate. Top the rice with the piece of fish. Serve with corn.
