Salsa Fish (with a bonus recipe!)
So Brad had this brilliant idea many months ago to make something called Salsa Fish. In his mind, he thought we should bake some tilapia that is covered in salsa. That's it. Well I had another idea in mind. So we tried both. Needless to say, his idea didn't turn out so well. First, the fish did not really absorb much of the salsa flavors. Second, while baked, the salsa slightly changed flavor itself. So it just didn't turn out quite how he expected. So below is my version of Salsa Fish. Enjoy!
Ingredients
- Tilapia Filets
- Salsa - homemade or store bought
- Olive Oil
- Cajun or Mexican Seasoning - we used Weber's N'Orleans Cajun Seasoning
Instructions
Step One: Preheat oven to 350.
Step Two: Tear off pieces of aluminum foil large enough to completely cover one piece of fish.
Step Three: Drizzle about 1/2 a teaspoon of olive oil on each piece of aluminum foil (this keeps the fish from sticking).
Step Four: Lay each filet on top of the aluminum foil and generously cover both sides with seasoning.
Step Five: Using the aluminum foil, make a tent for the fish. I try and seal it pretty well with as little of the aluminum foil touching the fish as possible. Place on a cookie sheet.
Step Six: Bake for 20 minutes or until white and flaky.
Step Seven: Remove fish from the foil onto a plate. Top the fish with salsa.
BONUS RECIPE - Homemade Salsa
Ingredients
- 1 can of whole tomatoes
- 1 onion
- About 1/3 jar of jalapenos
Instructions
Using a small (or large if that's what you have) food processor combine the above ingredients until mixed well. Add more onion or jalapenos to taste. So EASY!
