Roasted Chicken
I found the roasted chicken recipe from the American Diabetes Association website. We wanted to find another way to cook chicken and while I was scrolling through their recipes I ran across this one.
Ingredients
- 4 boneless chicken breasts - I only used 2 and cut them in half lengthwise
- 1 teaspoon of salt
- 1/4 teaspoon of pepper
- 1 tablespoon of olive oil
- 1/4 cup of lemon juice
- 2 tablespoons of minced garlic
- 1.5 teaspoon of paprika
Instructions
1. Whisk together all ingredients except the chicken and paprika in a small bowl
2. Spray a baking sheet with cooking spray and place the chicken on the baking sheet
3. Brush mixture onto the chicken and distribute evenly
4. Sprinkle each chicken evenly with paprika
5. Bake the chicken at 350 degrees for 35 minutes or until chicken is cooked throughly
6. Serve!
