Mini Taco Cups
I made these mini taco cups for the Super Bowl earlier this year. I have made something similar using fillo shells. I do feel like the ones with fillo shells are slightly better, but these may be slightly healthier, ha! They are super easy to make and are really easy appetizers to have at any event!
Ingredients
- 4 burrito sized tortilla shells
- 3/4 taco seasoned ground beef [cook following instructions on seasoning packet]
- Cheese and any other toppings you would prefer
Instructions
1. Cook ground beef and following instructions on seasoning packet.
2. Cut the tortilla shells using cookie cutters. You want semi large circles. I used a tie fighter cookie cutter and it worked perfectly. We were able to cut 3 out of one shell.
3. Insert the cut tortilla shells inside of a cupcake tin. I used a 12 cupcake tin.
4. Add ground beef.
5. Add toppings that you want to be heated. We only added cheese.
6. Bake for about 5-10 minutes on 250. You just want to heat it long enough to melt the cheese and overall heat the tortilla since the beef is already done.
7. Serve!
