Splenda Sugar Cookies

So since Brad was diagnosed diabetic, we have altered our way of living. I have also been trying to general eat better and lose weight myself. Well we have tried to find lower carb food and desserts. One alternative we made was splenda sugar cookies. Personally I do not like splenda. I prefer sweet and low. I think every person has their preference on sweeteners though. Anyhow, we made these and Brad and his family really likes them. I will say, they are not THAT much lower in carbs than the real thing though. They are probably far less in sugar, but our doctors said to focus on carbs not sugar. Anyhow, Brad does like these, so we will make them again I am sure.

Ingredients

  • 1 cup butter, softened

  • 1 cup of Splenda Sugar Blend

  • 2 eggs

  • 2 teaspoons of vanilla extract

  • 4 cups all purpose flour

  • 1 teaspoon of baking powder

  • 1/2 teaspoon of salt

Instructions

1. Beat butter at medium speed in an electric mixer until creamy. Gradually add Splenda. Add eggs one at a time. Stir in vanilla.

2. Combine flour, baking powder, and salt in a separate bowl. Gradually add flour mixture to the splenda mixture.

3. Wrap dough in plastic wrap and chill for at least one hour.

4. Remove dough from the refrigerator and roll on a lightly floured surface. I work with small portions at time. Cut with a cookie cutter, and place on a greased cookie sheet.

5. Bake for 8 minutes at 325.

6. Decorate as you like and serve!
