Burrito Bowls
These burrito bowls are fairly healthy with the use of cauliflower rice instead of regular rice. If you like the ones from Chipotle or Salsarita’s, you should like these! I found this recipe via Instagram. Luckily I couldn’t really tell the rice was cauliflower.
Ingredients
1 bag of frozen cauliflower
1 pound of beef
1 can diced tomatoes
1/4 cup diced onions (I used frozen ones)
1/4 cup chicken broth
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon chili powder
2 cups of shredded cheese, we use Mexican style
salt and pepper, to taste
desired additional toppings - sour cream, jalapeños, cilantro, etc.
Instructions
1. In a large pan, brown the beef with the onions. Drain the fat and set the beef aside.
2. While the beef is browning, cook the cauliflower rice per the instructions on the bag.
3. Add the rice to the original pan and cook for about 3-5 minutes on medium heat. Add in all of the spices and mix well. Add the tomatoes and broth and bring to a simmer.
4. Once all of the juices have cooked out, add the beef back to the skillet with the rice mixture. Mix together well. Top with cheese and place a lid on top of the pan. Cook until the cheese is melted.
5. Serve in a bowl with all of your favorites toppings!
