Taquitos
This is an other super easy instagram recipe I found. I kind of adjusted the recipe to suit my taste a bit more, but I will list the alternative too. AND this works best with an air fryer. I am sure you could do this in the oven, but the air fryer gives it the crispiness I love!
Ingredients
Flatbread - I used Joseph’s Lavash Bread
Cooked meat of your choice (I used leftover taco meat)
Cheese
EVOO Spray (or you can use unsalted butter, but I didn’t care for the butter flavor this left)
Instructions
1. Cut your flatbread into strips. One rectangle piece made 3 taquitos.
2. On one end of the flatbread at a spoonful (or two) of your meat then top with cheese. Fold into triangles, and kind of “tuck” the end when you finish. Hopefully my step by step picture below will give you a better idea, ha!
3. Either brush both sides with melted unsalted butter, or spray both sides with the EVOO spray. This helps it crisp and keeps it from sticking.
4. Cook for about 5-7 minutes at 350 in your air fryer. 7 minutes overcooked my first set, but 5 minutes was perfect with the second set.
5. Serve! You can also switch out the insides and do a variety of “stuffings”.
