Easter Cupcakes
These are really easy to make cupcakes thanks to a box mix. The decor is really easy and cute as well! There is even a nice surprise in the middle :-)
Ingredients
- Box Cake Mix
- Oil (varies by cake mix)
- Eggs (varies by cake mix)
- Water (varies by cake mix)
- Cupcake Liners
- Icing
- Green Food Coloring
- Sprinkles
- Peeps Chicks
Instructions
One - Preheat oven to 350 degrees
Two - Line cupcake pan with cupcake liners
Three - Combine ingredients in a mixing bowl
Four - Blend ingredients for approximately 2 minutes, or until batter is smooth
Five - Pour into cupcake pan and bake for approximately 20 minutes
Six - Let cool for 45 minutes to an hour
Seven - After they are cool, you want to cut the center out of the cupcake; Make sure to save the top portion, but you can put aside the middle (second picture)
Eight - Pour sprinkles into the missing center piece; be sure to shake the cupcake a little so that the sprinkles are settled
Nine - Place the top of the cupcake back in position; continue until all cupcakes are complete
Ten - For 24 cupcakes, I only used half a tub of icing. Scoop icing into a bowl and mix in the green food coloring
Eleven - Ice the cupcake; I just use a knife, but you are welcome to get fancy
Twelve - Add the Peep chick on top!

**If you do not have enough Peeps for all of your cupcakes you can also use some peanut M&Ms as "eggs"...
...And even had a bunny shaped marshmallow!
