Spicy Parmesan Zucchini

Spicy Parmesan Zucchini

We love zucchini, so when I went to the beach a few weeks ago I had to get some at the farmer's market.  The recipe below is perfect for fresh zucchini, but it could probably work for frozen zucchini if it is nice and thawed.

Ingredients

  • 1 large zucchini, sliced
  • 2 tablespoons of olive oil
  • 1/4 teaspoon of red pepper flakes
  • 1/4 teaspoon of minced garlic
  • 2 tablespoons of parmesan cheese
  • Salt
  • Black Pepper

Instructions

1. Heat the oil in a frying pan over medium-high heat

2. Once warm, add red pepper flakes and garlic

3. Mix together and sautΓ© for about a minute or two

4. Add one layer of zucchini and flip after a couple of minutes

5. When the middle of the zucchini has softened, remove from the pan and place on a plate (you can continue cooking another layer if needed)

6. Top with parmesan

The only recommendation I have is if you have a lot of zucchini, you may want to add some more red pepper and garlic as you go instead of using it all at once.  Our frying pan is smaller and would not hold the entire zucchini.  It is also really spicy, so you may want to cut back on the red pepper some if you aren't a huge spice fan.  Enjoy!
