Air Fryer Seasoned Okra

I love our air fryer, but we go through moments of not using it. We love cooking okra, but it can stink up the house if we fry it. So I decided to try it in the air fryer. I have made it two ways. You can find one way here. The other way is below and is much easier.

Air Fryer Okra

We are loving our air fryer. One of our favorite fried things (or at least mine) is fried okra. But frying it in grease leaves the house stinky. When doing the recipe below, I actually tried two methods. I find this recipe is about as close as I can get to real fried okra.

Corn Casserole

One of the new dishes I wanted to make for Easter was a corn casserole. I love corn, but I wanted something a bit fancier for Easter. It turned out delicious and was really easy to make.

Grilled Corn

So for July 4th, we bought corn to grill along with our smoked ribs and potato. Well we were out of aluminum foil, and I didn’t realize this until right before needing to cook it. So I attempted a new method…grilling the corn in the husks.

Bang Bang Cauliflower

So I love bang bang shrimp, and I love cauliflower. And while I do not like cooked cauliflower, I found that roasting cauliflower isn’t so bad. So I found this recipe online and gave it a try. It is really good, and so good I may try it with chicken or shrimp in the future too!

Roasted Green Beans

Brad’s mom made us these green beans many months ago. They were really, really good. So good, Brad requested these instead of green bean casserole for Christmas dinner! Well they are super easy to make and super tasty. She sent me the recipe, and now I am sharing it with you! Enjoy!

Balsamic Chicken

I love one pot meals, but they are hard to do now with Brad having diabetes. Most one dish meals are full of carbs, or just aren’t good at all. So when I ran across a meal with chicken and asparagus, I thought I had to try it! I wasn’t too fond of the tomatoes (although Brad liked them), so next time I might try some squash or another non-green veggie.

Grilled Zucchini

We were grilling steaks a while back, and I had some zucchini I bought for a side dish. We make zucchini a lot but I wanted a new way. So I last minute googled a recipe to grill zucchini. I knew I could just throw them on the grill, but I wanted a good marinade or seasoning. Check it out below.

Brussel Sprouts

So I am weird and LOVE brussel sprouts.  Brad always tells me how much he hates them.  Well for Mother's Day him and Melody gave me the new Magnolia Table cookbook.  In it was a yummy sounding recipe that Brad agreed to try.  I have recently found out I have a pork allergy, so I did use turkey bacon instead of regular bacon.  I didn't care for the turkey bacon in this dish, so next time I would leave it out.  But I am certain regular bacon would be amazing in it.  I also adjusted the recipe a lot for what we like.  So below is MY version.


Parmesan Asparagus

We love asparagus in our household.  Brad isn't a fan of it from a can, so we usually buy fresh asparagus and try to find different ways to cook it.  Usually we just simply bake it.  But every now and then we like to spruce it up at bit.  This isn't anything super fancy or even complicated, but it adds just a touch of something different to a really great vegetable.

Baked Squash

In an effort to find more ways to get vegetables in our diet, I have been trying to figure out new ways to cook them.  Melody loves anything crunchy, so I decide to bake some squash "chips".  She didn't eat them unfortunately.  But Brad and I really liked them!  My only recommendation is to cut them more evenly so that they cook more evenly!

Roasted Tomatoes

Our neighbor gave us some fresh tomatoes from her garden this summer.  She gave me so many I had to find something to do with them before they all went bad!  So I decided to roast them for a side item one night to go along with our dinner.  Below is the recipe I came up with.

Squash Salad

I found this recipe in one of my Family Circle magazines.  The only reason I noticed it was because I wanted to try the chicken recipe attached to it.  Then I noticed the chicken recipe also included a squash salad recipe.  Check it out below.

Cauliflower Tater Tots

So I was trying to find a way to get Melody to eat vegetables.  That is truly a struggle of mine.  She loves french fries, tater tots, and any other form of potato.  I decided to try and make a fake tater tot.  I saw on the Today Show where people use cauliflower a lot, so I decided to give it a go.  I found an easy recipe online and attempted it.  Of course, Melody didn't fall for it.  She did eat one, but no more.  Brad said it tasted like real tater tots to him.  I however didn't care for it.  Normally I wouldn't share recipes I didn't care for, but since Brad liked it, I decided to share it anyway.

Broccoli Salad

I found this recipe on Pinterest.  I love the broccoli salad from Ruby Tuesday's, but we never eat there anymore.  I haven't been to a decent Ruby Tuesday's in years.  They are either super slow, super rude, or the food is awful (or a combination).  We usually only go if we have a gift card or a really great coupon and want something different.  Anyhow, I saw this recipe and had to try it.  It isn't quite like what I envisioned, but it was still good.  My only complaint was that it was a little too runny.  I also didn't include the cranberries like the website recommends because Brad doesn't care for them.  I only made 1/3 of the original recipe as well.  We didn't need quite that much because I wasn't sure if I would like it enough to save.
