Shepard's Pie
Ingredients
- 1 Bag of Steam and Mash Potatoes (butter and milk required)
- 2 Tablespoons of Extra Virgin Olive Oil
- 1/3 of a Cup of Cheddar Cheese
- 1 Chopped Onion
- 1 lb of Ground Beef
- 2 Chopped Tomatoes
- 1 1/2 Cups of Corn
- 1 Finely Chopped Carrot
- 1 1/2 Tablespoons of Chili Powder
- 1 Teaspoon of Salt
Instructions
1. Cook the Steam and Mash Potatoes per the instructions on the bag (this is my shortcut method, by all means you can cook mashed potatoes from scratch)
2. Heat 1 tablespoon of EVOO in a large skillet over medium-high heat. Add the onion, carrot, tomatoes, 3/4 of a teaspoon of chili powder and 1/2 of a teaspoon of salt. Cook until tender, about 10 minutes.
3. Transfer vegetables into a square baking dish (approximately 2 quarts)
4. In the same skillet, heat the remaining EVOO over medium-high heat. Add the beef, the remaining chili powder and salt, and cook until the meat is brown.
5. Stir in the corn and 1/4 a cup of water and simmer for 2 minutes.
6. Spread the mixtures over the vegetables in the baking dish.
7. Preheat boiler, I did mine on high.
8. Mash the potatoes with the required milk and butter
9. Mix in cheese to the potatoes
10. Spread the mashed potatoes over the beef in the baking dish
11. Broil under the potatoes start to brown, approximately 1-2 minutes.
12. Serve!
