Tater Tot Pie
So many months ago, I saw this delicious looking recipe being made on the Today Show. I used to get a lot of my recipe ideas from the Today Show. These days I don't watch the Today Show quite as frequently. We would watch it a lot at 9 am, but when they replaced Today's Take with Megyn Kelly Today, I stopped watching that hour altogether. I gave it a chance, but I didn't care for the setup. Anyhow, I decided to make this recipe after seeing it, and I really enjoyed it. My only complaint is I didn't care for how the tater tots reheated for leftovers. I think this is a great dish to serve to a larger family or gathering. Brad ate the leftovers without complaint though.
Ingredients
- EVOO
- 1 pound of ground beef
- 2 teaspoons of Worcestershire sauce
- 1/2 teaspoon of paprika
- salt and pepper
- 2 tablespoons of tomato paste
- 1/2 cup of beef broth
- 12 ounce bag of frozen peppers and onions, defrosted
- 2 thinly cut zucchini
- 2 thinly cut carrots
- 8 ounces of shredded Mozzarella cheese
- 32 ounce bag of cooked tater tots
Instructions
1. Preheat oven to 375
2. Heat oil in a pan over medium-high heat
3. Add the beef, Worcestershire sauce, paprika, salt, and pepper to the hot pan; cook until brown
4. Stir in tomato paste and let cook for a few minutes
5. Add the broth and let simmer for a few more minutes
6. Remove the meat mixture to a bowl leaving the fat in the pan
7. Add the peppers and onions, zucchini, carrots, salt and pepper back to the pan and cook until the veggies are tender
8. Take a 9x13 dish and layer in the following order: beef, half of the cheese, the vegetable mixture, then top with the rest of the cheese. Now add all of the tater tots tightly. Sprinkle with paprika.
9. Bake for 25 minutes and serve!
