Mexajita Chicken
I found this recipe on the Food Network website while looking for some different crockpot recipes. Crockpot is an easy way to fix a lot of food without a lot of effort. This also goes perfectly with Mexican cornbread!!
Ingredients
- 3 chicken breasts
- salt and pepper
- vegetable oil
- 2 cans of pinto beans
- 2 cans of rotel
- 1 tablespoon of fajita seasoning
Instructions
1. Heat oil in a skillet over medium heat; add chicken breasts; top with salt and pepper
2. Cook for about 5 minutes total; just enough to sear each side of the breast
3. In a crock pot, add the 2 cans of pinto beans
4. Place chicken breasts on top of the beans
5. Pour rotel over the chicken breasts
6. Add fajita seasoning
7. Cook on low for 4-5 hours
8. Serve!
