Manicotti

Brad absolutely loves manicotti.  If we go to a restaurant that serves it, he will usually order it.  I had never tried it until I had it with him.  His mom also makes it on occasion.  Well I wanted to find a semi-easy recipe to make for him.  I found one online and decided to give it a try.  I did use more spaghetti sauce than the original recipe called for, but I like it with more sauce personally.

Ingredients

  • 1 pint ricotta cheese
  • 8 ounces (1 small bag) of mozzarella cheese
  • 3/4 cup of parmesan cheese
  • 2 eggs
  • 1 teaspoon of parsley
  • Salt
  • Pepper
  • 32 ounce jar of spaghetti sauce 
  • Manicotti pasta

Instructions

1. Cook manicotti pasta and drain, set aside

2. Preheat oven to 350 degrees

3. In a bowl, combine ricotta cheese, mozzerella, 1/2 cup of parmesan cheese, eggs, parsley, salt, and pepper

4. Pour approximately 1 cup (different from original recipe) of spaghetti sauce in the bottom of an 11x17 baking dish.

5. Fill each shell with approximately 3 spoonfuls of the cheese mixture

6. Place each filled shell inside of the baking dish until it is full (I think we had approximately 3 shells and no mixture)

7. Pour remaining spaghetti sauce over the top of the filled shells

8. Bake for 30 minutes

9. Remove from oven and sprinkle with remaining parmesan cheese (I just sprinkled until it was all covered)

10. Bake for another 15 minutes (or until cheese is melted)

11. Serve!
