White Chocolate Lemon Cookies
I have mentioned it before, but on occasion I like to bake during the week before Brad gets home. It is a nice treat for him. The other day he kept mentioning his love for cookies. I am not sure if that was a hint or not, but I decided to try to find a new recipe. I wanted something with lemon and white chocolate chips. I found a recipe that I happened to have most of the ingredients, so I made it!
Ingredients
- 1/2 cup softened butter
- 2/3 cup sugar
- 1/4 cup brown sugar
- 1 tablespoon of lemon juice
- 1 teaspoon of syrup (I was out of vanilla)
- 1 egg
- 1 1/2 cups of flour
- 1 teaspoon of cornstarch
- 1 1/2 teaspoon of baking powder (I was out of baking soda)
- 1/2 teaspoon of salt
- lemon zest
- 3/4 cup of white chocolate chips
Instructions
1. In a mixer, add butter, sugar, and brown sugar. Mix until well-blended.
2. Add lemon juice, syrup, and egg to the mixture. Mix until well blended.
3. In a separate bowl, add the flour, cornstarch, baking powder, salt, and lemon zest. Mix well.
4. Slowly add the dry ingredients to the wet ingredients. Mix well blended.
5. Add chocolate chips and mix with a spoon.
6. Scoop spoonfuls of the mixture onto a bake sheet. Bake at 350 for approximately 15 minutes. Let cool on baking sheet for approximately 5 minutes before removing to a wire rack.
7. Serve!
