Cheeseburger Stuffed Bellpepper
Stuffed bellpeppers always look amazing to me. I would see them at Costco, and I would always want to get them. But it never made sense to buy them from Costco because there were way too many in a package for us to eat. I have made something similar called bell pepper boats. They were decent, but I am not a huge fan of cooked bell peppers. I am not sure why I made the stuffed bellpeppers for this reason. But the filling was actually pretty good. And it is fairly healthy. Brad loved the entire thing. So if you like cooked bell pepper then this will be for you. The only thing I left out of the original recipe was the pickle relish. Brad hates pickles so I knew this was not an option. Next time I would also leave out the mustard. It was overpowering throughout the meal. But we also aren’t huge mustard eaters.
Ingredients
1 cup of cooked brown rice
1 pound of beef
1 cup of diced onions
2 tablespoons of Worcestershire sauce
2 tablespoons of ketchup
1 tablespoon of mustard (I would leave out in the future)
1/3 cup of tomato sauce
3 tablespoons of water
1 cup of low fat/non fat cheese, shredded
4 large bellpeppers (I used 3 and froze the remainder of the “stuffing”)
salt and pepper to taste
Instructions
1. Cook rice, set aside. Preheat oven to 400.
2. Cut off the top of the bellpeppers and clean out the seeds and membranes.
3. In a large skillet, cook the beef and onions. Season with salt and pepper.
4. Stir in Worcestershire sauce, ketchup, mustard, tomato sauce, and water.
5. Stir in 3/4 up of cheese and the cooked rice. Mix well and continue to cook until heated through. If needed, add more water.
6. Stuff each pepper with the ground beef mixture and top with 1 tablespoon of cheese. Place each in a baking dish just large enough to hold all of them. Pour about 1 cup of water in the bottom of the dish (enough to cover the bottom). Cover the dish with foil and bake for 45 minutes.
7. Serve!
