Chicken Taco Salad
Mexican is such an easy type of food for us to quickly throw together for dinner. We tend to eat Mexican at least once, if not twice, a week. Ironically, Brad isn't a huge fan of Mexican food. He definitely tolerates it more when I cook it at home vs. going out, but it is still not his favorite. I wanted to try and and figure out a different take on Mexican, so I came up with chicken taco salad. Nothing too fancy, but it was different enough. It was really good, and I prefer it over beef taco salad.
Ingredients
- 2 chicken breasts
- 2-3 tablespoons of taco seasoning
- 3-4 tablespoons of EVOO
- 1/2 of an onion
- 3-4 spoonfuls of sliced jalapeños
- 1/2 can of whole tomatoes
- lettuce
- cheese
- tomatoes
- 1/4 cup of sour cream or ranch dressing
Instructions
1. Heat EVOO over medium heat in large frying pan
2. Slice chicken then add the taco seasoning; Cover as evenly as possible. Add to the hot pan and cook until done.
3. While the chicken cools (or if you like it hot on your salad, you can make this while it cooks), make my salsa (you can also buy remade if you prefer). In a food processor, combine the onions, jalapeños, whole tomatoes and chop. Add more jalapeños if you like it hotter.
4. Assemble your salad. This made two salads for us. I do the lettuce, followed by the cheese and tomatoes. Then add the chicken. Next I top with salsa and either ranch or sour cream. I prefer sour cream and Brad prefers ranch.
5. Serve!
