Mini Frittatas

These mini frittatas are another recipe I found on the American Diabetes Association website that is low carb and high protein.  They are also very good and really quick and easy to make.  My only recommendation would be to not use cupcake liners or use better ones that we used.  The egg mixture stuck to ours.  You can also add additional veggies or even some more protein via bacon, sausage, etc.

Ingredients

  • 1/4 cup of diced onions
  • 1/2 cup of diced bellpepper
  • 5 eggs
  • 4 egg whites
  • 3 tablespoons of shredded parmesan
  • salt and pepper to taste

Instructions

1. Spray a small frying pan with cooking spray and sauce the onions and bell peppers on medium to high heat until golden brown, around 5 minutes.  Set aside.

2. In a mixing bowl, whisk the eggs, egg whites, parmesan, salt, and pepper.  Add the onion and bell pepper mixture and mix well.

3. Line a muffin tin with cupcake liners (or just spray a muffin tin and don't use liners)

4. Evenly pour egg mixture into muffin tin.

5. Bake on 375 for 20 minutes...Serve!
