Potato Skins
I love potato skins. They are one of my favorite go to recipes for game days at home too. That are usually fairly easy, very filling, and super yummy. I mean who doesn't like them?!? Well one thing I do dislike is I feel like I waste so much of the potato when I do full potato skins. I also go through so many potatoes too. Well one day while flipping through Pinterest, I saw where people were using sliced potatoes instead of full potato skins. So I decided to try it out. Not only do you go through less potatoes, I actually like it much better. You don't have quite as much skin, but you still get some on the edges. You should give this a try if you love traditional ones!
Ingredients
- 2 potatoes
- 3+ tablespoons of butter
- Toppings such as shredded cheese, green onions, bacon, etc.
Instructions
1. After cleaning potatoes, cut them into 1/2 inch slices. Discard the ends.
2. Melt the butter in a bowl and brush each side of the slices of potatoes with the melted butter.
3. Place the potatoes on a cookie sheet.
4. Bake the potatoes at 400 for 30 minutes.
5. Remove the cookie sheet.
6. Top the potatoes with all of your toppings.
7. Place the cookie sheet back into the oven and bake for about 3-5 minutes until the cheese has melted.
8. Remove and serve!
