Chicken Parmesan Casserole
I love chicken parmesan, but it isn't always the healthiest considered it is fried chicken. Well I found a healthier version on Pinterest recently, and I decided to give it a try. It was surprisingly great. And the noodles are totally optional if you want to make it a bit healthier.
Ingredients
- About 2-3 cooked chicken breasts (or a rotisserie chicken would work too)
- 28 ounce jar of pasta sauce
- 1/2 cup of shredded parmesan cheese
- 1 1/2 cups of mozzarella cheese
- 1 cup of bread crumbs
- 1-2 tablespoons of Italian seasoning
- 1-2 tablespoons of EVOO
- Salt and pepper to taste
Instructions
1. Spray an 8x8 glass dish with non-stick spray.
2. Shred the chicken and put it in a layer on the bottom.
3. Pour the marinara sauce on top of the chicken.
4. Top with both cheeses and cover evenly.
5. In a small bowl, mix together the bread crumbs, seasoning, and EVOO.
6. Spread bread crumb seasoning over the cheese.
7. Bake for 20-25 minutes on 350.
8. Serve with noodles or by itself, if you prefer.
