Spinach, Egg, and Sausage Open Face Sandwich

I kind of made this recipe up after seeing some instagrammers make something similar. Mine didn’t turn out perfect, but you can really make this more about what you like. You can add more of less of anything. The big thing I would do differently is use less turkey sausage. But otherwise it was really good.

Ingredient (2 servings)

  • 8 oz of turkey sausage (I would likely cut this down to 4 next time)

  • 2 English Muffins, cut in half

  • 2 tablespoons of bellpepper, chopped

  • 4 tablespoons of onion, chopped

  • 1 clove of garlic, chopped

  • 2 tablespoons of butter

  • 6 eggs

  • 1 cup of spinach

  • 4 tablespoons of shredded cheese (I used gouda)

  • salt, pepper, and other toppings (I used avocado)

Instructions

1. Cook sausage in a pan, set aside. While sausage is cooking…broil English Muffins for about 3 minutes; chop veggies; add veggies to a separate pan along with garlic and butter, sauté; add eggs to a bowl with salt and pepper, scramble with a fork.

2. Now add spinach to the pan with the veggies. Cover and let the spinach wilt.

3. Add the eggs and sausage to the veggies. Cook until the eggs are done. While the eggs are cooking, add 1 tablespoon of cheese to each muffin. Broil for about 3 minutes or until cheese melts.

4. Assemble adding the egg mixture on top of the muffins. Then add any toppings and eat!
