Scallops
For my birthday, we decided to stay in that evening and cook steak and scallops. This would allow us to eat cake after dinner since we were not eating out and getting dessert then. Well I wanted to share the recipe I came up with to make them. Brad loved them. I really liked them myself. They could have had a bit more flavor though. Next time I will add more salt and pepper than just a sprinkle.
Ingredients
6 scallops (about 3/4 a pound)
2 tablespoons of EVOO
salt, pepper, and flour (you will be sprinkling these, so no real measurements)
1/2 cup of butter
2 gloves of minced garlic
Instructions
1. Using a paper towel, pat your scallops dry. You want as little moisture as possible remaining.
2. In a skillet add the EVOO and heat to medium to high. Sprinkle one side of the scallops with salt, pepper, and flour.
3. Once the skillet is nice and hot, add your scallops, seasoned side down. You want it sizzling. Next sprinkle the other side of the scallops with salt, pepper, and flour.
4. After about 3 minutes, flip the scallops. Cook for another 3 minutes. Then flip again.
5. Add the butter and garlic to the pan. Cook each side another minute or two a piece. You want the butter to have time to melt, and you also want the scallops to be nice and seared. If you feel like you scallops are burning, but the butter hasn’t melted, you can turn the heat a bit lower if needed.
6. Serve!
