Buttermilk Pancakes
I am constantly searching for the perfect pancake recipe, and I have yet to find it. But this one is pretty close. It is far from healthy, but it is quite yummy!
Ingredients
2 cups all-purpose flour
5 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
2 cups buttermilk
2 large eggs
2 teaspoon vanilla
Instructions
1. In a medium bowl mix together the dry ingredients. In a separate bowl, whisk together the eggs, buttermilk, and vanilla. Add wet ingredients to the dry ingredients. Mix well.
2. Heat griddle over medium-high heat while batter rests. Brush griddle with butter (I used stick butter and rubbed it on). Then add pancakes. Once they begin to bubble, flip. Donβt press down and donβt flip again.
3. Serve with syrup and any other toppings you like!
***TIP, we always have so many leftover. I place them in a gallon bag separated by parchment paper and freeze them. This makes an easy breakfast. Just pop them in the toaster!
