Shrimp Fried Rice
I was really skeptical about this all in one pot kind of air fryer meal. I mean you literally cook it all in the air fryer which seemed kind of crazy. But it went really well and I can’t wait to make it again!
Ingredients
1 tablespoon of canola oil
1/3 cup chopped onions
1/3 cup chopped carrots
1 teaspoon of salt, divided
2 large eggs, scrambled
1 pound of peeled, deveined raw shrimp
1 package of precooked microwavable rice
1 tablespoon soy sauce
1 teaspoon rice vinegar
1/4 teaspoon black pepper
Sriracha mayonnaise, slice scallions, or other toppings
Instructions
1. Remove the insert from the air fryer. Preheat to 400. Add oil to the basket. Then add onions, carrots, 1/2 teaspoon of salt, stir, and cook for 5 minutes. Add scrambled eggs and cook until partially set, around 3 minutes
2. Add shrimp, rice, soy sauce, vinegar, pepper, and remaining salt. Stir. Cook 10 minutes. Stir again and cook another 10 to 15 minutes.
3. Serve drizzerei with Sriracha mayonnaise and scallions.
