Spinach and Tomato Frittata

This is another Noom recipe that I found both Brad and I really like. I changed the original recipe up some by doing it in muffin tins, and I prefer not using the tomatoes. So I add those in within the muffin tins to keep them out of mine. This is great reheated too.

Ingredients

  • 2 sliced green onions

  • 3 eggs and 5 egg whites

  • 1 cup fat free shredded mozzarella cheese

  • 1 cup quartered grape tomatoes

  • 2 cups spinach

  • sprayed avocado oil

Instructions

1. Spray a frying pan with the oil. Cook the green onions for a minute or two until softened.

2. In a bowl, add in the spinach, eggs, egg whites, and cooked green onions. Mix well.

3. Pour mixture into a greased muffin tin. Add quartered tomatoes to the individual muffin tins.

4. Bake for 15 minutes at 400. Remove. Top each one with approximately a tablespoon of shredded mozzarella cheese. Bake another 3 minutes at 400.

5. Serve!
