Cajun Shrimp and Grits
I found this recipe by searching past recipes on Home Chef’s website. I did adjust it some for our taste. And next time I would make this using shrimp with the tail OFF.
Ingredients
1/4 cup shredded cheddar cheese
1/4 cup cream cheese
1/2 cup instant grits
2 cloves minced garlic
1/2 cup corn
1/2 cup quartered grape tomatoes
1 1/2 teaspoon Old Bay Seasoning
2 green onions, chopped
4 teaspoons EVOO
Instructions
1. Heat 2 teaspoons EVOO over medium heat. Pat shrimp dry. Cook shrimp, around 2-3 minutes per side. Transfer to a plate. Save pan.
2. Boil 2 cups of water. Once boiling, stir in grits and a pinch of salt. Reduce heat to low and whisk constantly for around 4-6 minutes. Remove from stove. Stir in cheddar cheese, cream cheese, Old Bay seasoning, and a pinch of pepper. Cover and set aside.
3. Using the pan the shrimp was cooked in, add 2 teaspoons of EVOO. Add tomatoes, corn, white portions of green onions, garlic, and a pinch of salt and pepper. Stir occasionally for around 2-3 minutes. Add 1/4 cup water and bring to a simmer. Once simmering, let cook for 1-2 minutes.
4. Stir in shrimp just to warm it.
5. Add grits to a bowl followed by shrimp and vegetable mixture. Top with the green onions, and serve!
