Roasted Tomatoes
Our neighbor gave us some fresh tomatoes from her garden this summer. She gave me so many I had to find something to do with them before they all went bad! So I decided to roast them for a side item one night to go along with our dinner. Below is the recipe I came up with.
Ingredients
- Grape or cherry tomatoes
- One part balsamic vinegar
- One part extra virgin olive oil
- Salt
- Pepper
Instructions
1. Mix the vinegar and oil in a small bowl. A lot goes a long way! I did about two tablespoons of each.
2. Add salt and pepper to taste; Mix.
3. In a bowl, add the washed tomatoes. Pour the oil/vinegar mixture over tomatoes and attempt to mix.
4. Pour onto a baking sheet. I prefer to cover the baking sheet in aluminum foil to make for an easy cleanup.
5. Bake on 400 for about 20 minutes or until the tomatoes are starting to split.
6. Serve!
