Breakfast Patty Melts
Brad loves regular patty melts, so when I ran across this recipe for breakfast patty melts, I knew I had to try them. They are not ideal during the week because they are a little time consuming to make. There is also nothing healthy about these, but they are oh so good!
Ingredients
- 4+ tablespoons of butter
- 1/2 of an onion, sliced
- 1/2 pound of ground sausage
- 4 eggs, beaten
- 6 slices slices of cheese
- 4 slices of bread
Instructions
1. Heat skillet over low heat and melt 2 tablespoons of butter. Add sliced onions and cook until soft and caramelized. Remove them to a bowl.
2. Form the sausage into two patties. Add them to the same skillet and increase the heat to medium. Cook on both sides until fully cooked. Remove them to a plate.
3. Wipe sausage grease from skillet; melt a tablespoon of butter in skillet. Add beaten eggs and cook until fully cooked. I truly scrambled mine due to the skillet I was using, but it would be better if you could better form them so they don't fall off your sandwich later!
4. Start to assemble the patty melt. The order goes: bread, cheese, sausage, egg, cheese, onions, cheese, bread.
5. Melt another tablespoon or two of butter on low heat in the skillet. Add the sandwiches to the skillet and cook until golden brown (about 5-10 minutes). Flip and do the same on the other side.
6. Serve! I could barely eat half, but Brad was able to eat all of his.
