White Chocolate Chip Cookies
The other night I wanted to bake some cookies and those that know me know I am not the best baker. I found this really easy recipe and luckily we had all the ingredients in the pantry. Below was my approach to the recipe:
Ingredients (makes a dozen cookies)
- 1/2 a stick of butter (softened)
- 1/2 an egg (at room temperature)
- 1/2 a cup and 2 tablespoons of flour
- 6 tablespoons of brown sugar
- 1/2 teaspoon of vanilla extract
- Pinch of salt
- 1/2 a cup of white chocolate chips
Instructions
Step One: Preheat oven to 350 (we have a convection oven, so we preheat to 325)
Step Two: Mix softened butter and brown sugar until fluffy
Step Three: Add egg, vanilla, and salt; mix
Step Four: Add chocolate chips and flour; mix lightly with a spoon, not mixer
Step Five: Lightly spray cookie sheet and scoop 1 tablespoon at a time on cookie sheet. Keep them about 2 inches apart. I am notorious about putting cookies too close together. I played it safe and only put six per sheet. Next time, I will probably try and fit all 12 on the sheet because they did not expand as much as other cookies do.
Step Six: Bake around 10 minutes. They won't brown much, and they may appear a little undercooked. Let sit on cookie sheets for about 5 minutes. This will continue the baking process some. Next, move cookies to a cooling rack. The website said 8-12 minutes baking time, but 10 worked perfectly for us. Happy Baking!
