Strawberry Oatmeal Bars
Melody loves strawberry muffins and strawberry pop tarts. I found this recipe on Pioneer Woman's website. I thought it sounded perfect to try with Melody. Well I learned a few things from making this recipe. One...a fork is not the same as a pastry cutter. I have since bought a pastry cutter! Two...giving this to a kid is SUPER messy. Crumbs EVERYWHERE!!! It was still a hit with her though!
Ingredients
- 1 3/4 stick of butter
- 1 1/2 cups of flour
- 1 1/2 cups of oats
- 1 cup of brown sugar
- 1 teaspoon of baking powder
- 1/4 teaspoon of salt
- 1 jar of strawberry jelly/preserves
Instructions
1. Preheat oven to 350
2. Mix the flour, oats, sugar, baking powder, and salt in a mixing bowl
3. Using a pastry cutter [I made the mistake of using a fork) cut the butter into the mixture; it should resemble crumbs
4. Butter a 9x13 pan
5. Add half of the mixture and press it onto the bottom
6. Add the strawberry jelly
7. Add the other half of the mixture
8. Bake for 40 minutes
9. Serve!
