White Chicken Chili

White Chicken Chili

Brad's Aunt Cindy recommended this recipe to me a while back.  She found it on pinterest and loved it.  Brad isn't a fan of beans, but he did eat around them.  The only change I made was instead of black beans, I used kidney beans.  It seems like a lot of ingredients, but it is super easy to make!  Check it out below.

Ingredients

  • 1 can of drained beans (I used kidney beans)
  • 1 can of drained corn
  • 1 can of rotel
  • I package of ranch seasoning
  • 1 teaspoon of cumin
  • 1 tablespoon of chili powder
  • 1 teaspoon of onion powder
  • 1/4 teaspoon of ground red pepper
  • 1 tablespoon of minced garlic
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of garlic powder
  • 1 tablespoon of butter
  • 1 chopped onion
  • 2 chicken breasts
  • 8 oz cream cheese
  • 1 cup of chicken broth 

Instructions

1. In the crockpot combine the beans, corn, rotel, ranch seasoning, cumin, chili powder, onion powder, red pepper, garlic, pepper, and garlic powder.

2. Cook butter and onions over medium heat in a saucepan until tender

3. Add onions to the crockpot.

4. Cut chicken breasts in halves and add to the crockpot 

5. Add the cream cheese on top of the mixture.

6. Cook on low for 7 hours.

7. Shred chicken and mix

8. Serve!
