Chicken Lettuce Wraps
I found this recipe in the Family Circle magazine. You can find the original recipe here. It sounded really yummy, and I love the lettuce wraps from PF Changs. It doesn't quite taste like those, but they are really good. Next time, I plan to make a sauce to add on top of the lettuce wraps. See what I did below.
Ingredients
- 1 cup of white rice
- 2 cups of water
- 3 tablespoons of canola oil
- 1 pound of ground chicken
- 1/4 teaspoon of salt
- 1/4 teaspoon of pepper
- 8 oz package of sliced mushrooms
- 2 cups of shredded cabbage
- 3 sliced scallions
- 2/3 cup of hoisin sauce
- Lettuce
Instructions
1. Add 1 3/4 cups water and rice into a pot and bring to a boil. Cover and simmer for 20 minutes. Remove from heat and let stand for 10 minutes.
2. Cook chicken in 2 tablespoons of canola oil until done.
3. Season with salt and pepper and remove to a plate.
4. Add mushrooms to the warm skillet and cook for 3 minutes.
5. Add cabbage, scallions, and the rest of the canola oil. Cook for about 3 minutes. **Tip: I used bagged cole slaw mix instead of the cabbage. The obviously wasn't what the recipe called for, but it was much easier.
6. Add hoisin sauce and the rest of the water. Then stir in the chicken.
7. On each lettuce leaf, add rice then the chicken mixture. I would top with some sort of sauce in the future. I used soy sauce as a substitute this time.
