I found this chicken lo mein recipe on Pinterest awhile back. It was really good, but pretty carby so it isn’t something we have often at all! But if you aren’t watching your carbs, give it a try.
So I have to be honest, finding new healthy recipes are getting harder and harder. I need food to stay full longer and not feel hungry an hour later. Well I found this recipe and it sounded amazing. I love Asian food, but it is hard to find healthy food because most of what I love is fried. This sounded perfect. BUT I must admit, it doesn’t have enough flavor to me. I may try it again, but use something other than orange juice. We will see.
A while back, Brad traveled out of town for a week for work. I always try to go out or cook things he normally would not eat. Well one thing he absolutely hates is peanuts. Well any form. So I found this cashew chicken recipe. It seemed like something I would never cook for him, and it seemed like something I could eat on for more than one night while he was away. I did leave a few things out as always though.
So back when we used to go to PF Changs (aka before Melody), I loved ordering the chicken lettuce wraps. They are fairly healthy (in comparison to the other menu items), and they taste amazing. Brad hates them though. Well one week when he was out of town for work, I finally decided to try and make them at home for dinner. They were great! They were also much easier to make than I expected. I may try making them again and freezing them for lunches. I have made some before, but they weren’t near as good as these.
In an effort to help Brad get his diabetes under control and change our eating habits, I found this recipe on the American Diabetes Association website. Like a lot of food we have cooked lately, the pictures do not look as appetizing as the meal actually was. This goes perfectly with rice and broccoli and even a few spring rolls!
We were buying groceries a few weeks ago, and on our menu that week was some form of a frozen meal. I was just going to get something from the freezer section at Walmart. I was thinking Asian, so maybe one of those PF Chang's meals for two. Well as we were looking for some Asian dipping sauces, I came across a PF Chang's Home Menu Sesame Sauce. I decided to purchase that and make my own sesame chicken. I am very glad I did! See what I did below.
I found this recipe in the Family Circle magazine. You can find the original recipe here. It sounded really yummy, and I love the lettuce wraps from PF Changs. It doesn't quite taste like those, but they are really good. Next time, I plan to make a sauce to add on top of the lettuce wraps. See what I did below.
