Ham, Egg, and Cheese Cups
In an effort to continue to find low carb food for Brad, I came up with these ham, egg, and cheese cups. I have seen similar recipes before, but I kind of just went out on a whim with this one, ha! These were easy to make on Sunday, and Brad took them to work for breakfast during the week. He would eat 2-3 at a time. He seemed to enjoy them. I am not a huge fan of ham, so these were not for me. Brad however is a huge ham fan!
Ingredients
- 4 eggs
- 2-3 chopped green onions
- salt to taste
- pepper to taste
- cayenne pepper to taste (if you like spice)
- approximately 9 slices of deli ham
- approximately 9 tablespoons of cheddar cheese
Instructions
1. Combine the eggs, green onion, salt, pepper and cayenne pepper in a mixing bowl. Whisk until well combined. I used two pinches of both salt and pepper, and I used a few sprinkles of cayenne pepper. It truly just depends on how you like your eggs.
2. In a muffin tin, layer in the following order: ham slice, cheese (one tablespoon her ham slice), and egg mixture. We were able to make 9 cups, but it is possible depending on how full you fill your cups that you can have more or less.
3. Bake on 350 for approximately 20 minutes. You want the eggs to be set and not wobbly. Then serve!
