Parmesan Asparagus
We love asparagus in our household. Brad isn't a fan of it from a can, so we usually buy fresh asparagus and try to find different ways to cook it. Usually we just simply bake it. But every now and then we like to spruce it up at bit. This isn't anything super fancy or even complicated, but it adds just a touch of something different to a really great vegetable.
Ingredients
- Asparagus
- Salt and pepper to taste
- Extra virgin olive oil (EVOO)
- Parmesan
Instructions
1. Preheat oven to 400.
2. Trim the ends of the asparagus. I just break them off, but you can chop them if you prefer.
3. Place asparagus in one layer on a cookie sheet.
4. Drizzle EVOO making sure you cover all of the asparagus. You don't want it drenched in it, so drizzle, then shake. You want it covered enough so that it doesn't stick to the sheet.
5. Sprinkle with salt and pepper, to taste.
6. Sprinkled with parmesan. If you want the asparagus more tender, you can add the cheese half way through your preferred baking time. Our asparagus is tender enough for me, but still crunchy,
7. Bake for about 15 minutes or until your liking. You want the cheese to be melted but not burnt.
8. Serve!
