Lemon Parmesan Fish (or Chicken) and Broccoli

In an effort to eat less red meat, I have been searching Pinterest for more fish and chicken recipes.  I found a 20 minute one pan recipe that I decided to give a try.  It turned out really good, but my first attempt wasn't the best.  I didn't love the dish.  I made a few adjustments (including the meat I used), and it was perfect. I have made the adjusted recipe with chicken, and it was great too.  Below is my adjusted recipe to the original I found on Pinterest.  At the VERY bottom I have included the pictures from my original attempt and some more info about why I didn't love it.

Ingredients

  • 1 pound of boneless skinless chicken tenders or fish of your choice [I used tilapia]
  • 1/2 cup of bread crumbs
  • 1/4 cup of parmesan cheese
  • Juice of one lemon
  • 1/2 teaspoon of garlic powder
  • 1 teaspoon of Italian seasoning (I have also used Greek seasoning)
  • 2 tablespoons of melted butter
  • 1 pound bag of frozen broccoli (or fresh)
  • Cooking Spray

Instructions

1. Preheat the oven to 400 and spray a baking sheet with cooking spray.

2. In a small bowl combine the bread crumbs and parmesan cheese and set aside.  In another bowl, combine the melted butter, lemon juice, garlic powdered, and Italian seasoning.

3. Dip the chicken in the lemon butter mixture, then into the breadcrumb mixture.  Then place the tenders onto the baking sheet.  Continue until all chicken tenders are coated and placed on the baking sheet.

4. Add the defrosted (or fresh chopped) broccoli around the chicken.  Lightly spray with cooking spray and sprinkle with parmesan cheese.

5. Bake for 20 minutes or until chicken is done and serve!

My first attempt I followed the original recipe without using lemon zest (I hate lemon zest).  I didn't like how soggy the chicken felt.  The adjusted recipe above allowed for the fish/chicken to be crispier.
