When Melody made the decision to have a Snow White birthday party, I already had the idea to do a Snow White ‘Barbie’ cake. Growing up I had many Barbie cakes at my birthdays and my birthday parties. I talked with my mom to confirm she still had the cake mold. And luckily she DID. So she gave me the mold, and I decided to attempt this cake. I was super nervous about making it, and I could not have made it without my mom for sure!

So the first big decision we had to make when it came to the cake was the doll topper. None of the Wilton “barbie” toppers really worked for Snow White. So I decided to just buy a Snow White doll from Walmart. Of course, little did I know, her top did not come off, only her skirt. I was worried about this, but it actually worked in our favor. It was also tricky getting the doll’s legs inside of the cake. Normally you are just placing a pick inside. But with a very gentle hand, we succeeded.

Mom and I did a practice run about a month before Melody’s party. This gave us an idea if the doll worked, what kind of icing we wanted to use, how much cake mix to use, and how long it would take.

The instructions with the cake mold said 5-6 cups of cake mix. On our test run we just poured it in until it was about 2 inches from the top of the mold. We covered the mold with crisco first and then did a light dusting of flour. Then we poured the cake mix in and baked about one hour. I was missing the rod in the middle of the cake mold, but it still cooked evenly, thankfully!

We let the cake cool for a few hours, then we inserted Snow White. She fit perfectly.

Now it was time to ice the cake. My mom bought some Wilton icing that is fairly thick (too want it to hold its form), and we also made some from scratch using powdered sugar, crisco, vanilla, and water. We tried both on the cake (one on each half) to see what we thought of the colors, texture, and taste. Ultimately we went with the homemade because it tasted much better and had a glossier finish (the one on the front of the cake is homemade; the one on the back was store-bought).

The Friday before Melody’s party on Sunday, I made the cake. With all that was going on that weekend, I didn’t want to do it any later. I did measure out the 6 cups instead of winging it since I baked it alone, ha. My cooling rack broke, so I placed it on a cooled cookie sheet.

I made cupcakes with the rest of the cake mix (both mini and regular size). I served the regular sized ones at the party and used the leftover yellow icing for decor. The mini ones were served Saturday night when Brad’s family was over for dinner.

Anyhow, mom came over Sunday and we iced the cake. The 6 cups barely left room for the doll, but my mom made it work. She definitely had to help make and apply the icing. I was no where near as quick as she was, but she has done these cakes for many years!

The cake turned out adorable in my opinion. It was perfect for her party, and she loved it. It also tasted really good. That icing brought back so many memories because it was the same icing recipe used on all of my cakes growing up. So yummy!
