Chicken Fajita Casserole

One evening a while back I invited my parents over for tacos. My mom had actually already started the process for this fajita casserole so she just brought it over, and I stole the recipe! It is super yummy and nice change to regular fajitas.

Ingredients

  • 3 chicken breasts, cut into strips

  • 1 bag of 3 pepper & onion blend, thawed

  • 1 tablespoon of oil

  • 1 packet of fajita seasoning

  • 5-6 flour tortillas

  • 2 cups of white cheddar cheese, shredded

Instructions

1. Mix together the chicken, oil and fajita seasoning. Let marinate for an hour or so. Place the pepper/onion mixture on a cookie sheet and mix with the chicken mixture. Bake at 400 for 20 minutes

2. In either a bundt pan or pound baking dish place a tortilla. Top with cheese, then add the cooked chicken/pepper/onion mixture. Continue to layer until you are out of cheese and chicken. We did either 3 or 4 layers. At the very end, top with a tortilla. Bake for another 20 minutes at 400.

3. Once done, flip it over onto a plate and cut into pieces like a pie.

4. Serve!
