One of the new dishes I wanted to make for Easter was a corn casserole. I love corn, but I wanted something a bit fancier for Easter. It turned out delicious and was really easy to make.
One evening a while back I invited my parents over for tacos. My mom had actually already started the process for this fajita casserole so she just brought it over, and I stole the recipe! It is super yummy and nice change to regular fajitas.
For me, this is one of those Pinterest recipes you see and wonder if it will really taste as good as it looks in these pictures. Well thankfully it did. I did make a few adjustments due to my pork allergy, but it still tasted really great and wasn’t too spicy at all!
A friend of mine on instagram introduced me to Joy Filled Eats. I went through their website and found SO many recipes I want to try. But one that we almost immediately tried was the taco casserole. And it was AH-MAZING! It is super easy to make, and even easier to make ahead of time and freeze. It is a definite meal we are adding to the rotation and a must for entertaining! We double this recipe for a group.
So I can be a really lazy cook. Like I hate to have to cook something, transfer it to a pan, then cook it again in the stove. I know a lot of times this can't be avoided. Usually when I cook something like this, I make sure all of the other dishes I am having with it are easy. Squash casserole is an example of this. I LOVE squash casserole. But I really hate putting so much effort into a side dish. I also felt like this wasn't a great dish to freeze and reheat. So my recommendation is to make only the amount you think you will eat. I will for sure do that next time. This will also only be a dish I make on the weekends or "good" weeknights, ha! Only due to my pure laziness of course.
