Mexican Corn
So I bought a bag of Mexican corn from Costco a while back and knew I would love it, but I didn’t. It just had an awful flavor. This recipe has all the flavor I hoped for, but my only complaint was how cold it was after mixing everything in with it. I think it would be great heated up after the fact, maybe, or even eaten right away.
Ingredients
Bag of frozen corn, steamed
3 tablespoons sour cream
1 tablespoon mayonnaise
1 tablespoon lime juice
1 tablespoon of chili powder
dash of cayenne papper
1/4+ cup of queso fresco
Instructions
1. In a bowl mix together all of the ingredients except the corn and queso fresco.
2. Add in the cooked corn and mix together.
3. Serve topped with the queso fresco.
