These are very classic, but also often forgotten about. We love them, and it help keep us from eating an entire potato! I really did just wing it when it came to the ingredients, so adjust according to your preferences. But I am listing about what I used.
I love our air fryer, but we go through moments of not using it. We love cooking okra, but it can stink up the house if we fry it. So I decided to try it in the air fryer. I have made it two ways. You can find one way here. The other way is below and is much easier.
My Noom goal specialist sent me the recipe a while back, and I loved it. I wouldn’t necessarily fix it every time we did nachos because I also love my homemade tortilla chips, but it is a great alternative.

So I absolutely love this side dish as the holidays. I actually never had it until my first holidays with Brad’s family. I have never tried to make it at home because I would be the only person to eat it. But this year I did make it for my family at Christmas. And while they tried it, my mom prefers traditional cranberry sauce (from a can of course) and no one else is a fan. But it was great, so I wanted to share.
This is another recipe I found on Noom. It isn’t that much different than our ordinary asparagus, but it does add a little bit of change.
So I bought a bag of Mexican corn from Costco a while back and knew I would love it, but I didn’t. It just had an awful flavor. This recipe has all the flavor I hoped for, but my only complaint was how cold it was after mixing everything in with it. I think it would be great heated up after the fact, maybe, or even eaten right away.
So I usually take the lazy way out and buy these biscuit mixes pre-made from the store. They are $1, you add milk or water, and all done. But I don’t always think about getting them, so I also make them from scratch on occasion.
These air fryer croutons are probably my favorite homemade croutons thus far. I made a bowl full and they were gone that night! Super delicious!
One of the new dishes I wanted to make for Easter was a corn casserole. I love corn, but I wanted something a bit fancier for Easter. It turned out delicious and was really easy to make.

One of the side dishes that I LOVE at Baumhower's Wings is their grilled potatoes. They are great with butter and sour cream, but amazing with ranch. So we decided to recreate them at home. And honestly, it is now my absolute favorite way to cook potatoes!
So for July 4th, we bought corn to grill along with our smoked ribs and potato. Well we were out of aluminum foil, and I didn’t realize this until right before needing to cook it. So I attempted a new method…grilling the corn in the husks.
I have a few zucchini recipes here on the blog already, but this is probably one of my most favorites (grilled zucchini is my absolute favorite). This is a very similar recipe, but I did add some garlic and pepper too.
I love one pot meals, but they are hard to do now with Brad having diabetes. Most one dish meals are full of carbs, or just aren’t good at all. So when I ran across a meal with chicken and asparagus, I thought I had to try it! I wasn’t too fond of the tomatoes (although Brad liked them), so next time I might try some squash or another non-green veggie.
