Quick Stir Fry
I am always looking for new and quick lunch ideas. Well we eat out every single Thursday due to Melody’s standing food therapy appointment. I get really tired of eating out at the same place every week. Especially since they have such a limited menu. So one week I only got their grilled chicken tenders, then I came home and whipped up a quick and delicious stir fry. I bought some frozen chicken too to have on hand to use when we don’t eat out.
Ingredients
Vegetables of your liking; some I use are: onions, bell pepper, broccoli, green beans, corn, brussel sprouts
Rice - I use brown rice cups that I heat up in the microwave
Protein - I use anything from eggs, grilled chicken, leftover steak, etc.
Soy Sauce
Instructions
1. Sauté your vegetables until they are tender. I will use a little bit of olive oil spray here.
2. Add cooked chicken and rice. If you are doing an egg, do it a few minutes before adding the rice and chicken. Mix well. Add a splash or two of soy sauce for flavor.
3. Cook until well heated and mixed thoroughly (and eggs are cooked if using).
4. Serve! I sometimes top with more soy sauce or Sriracha sauce
