EveryPlate

Back in August, a friend of mine introduced me to EveryPlate. You may remember last year I tried Green Chef. I loved the idea and concept, but the cost was not worth it, the produce was inconsistently bad, and the food itself was too flavorful. Normally flavor is good, but it was sometimes not the best. However, the friend of my was introduced to EveryPlate and raved about it. The cost was reasonable, the produce and meat were always good, the delivery days were great and reliable, and the taste was great.

Chicken Tender Wraps

Lunch can be a struggle. I get bored easily, and I want things quick. I don’t care for leftovers, so I feel my options are fairly limited. But I decided to make myself some wraps using chicken tenders from Slim Chickens. This turned out perfect and is a great lunch to have on occasion.

Chicken Taco Jars

I have been searching for some easy lunch recipes. I stumbled across this one, and I immediately wanted to try it. It was really good the day of. My lettuce did get a bit soggy the next day. But I did really like how easy it was to make in general.

Green Chef

I have wanted to try a meal delivery service for quite some time. My problem has been the overall cost, lack meal options that both Brad and I both like, and delivery day. Ideally I would like something that could delivery on a Monday so we can eat on it all week, but that has been near impossible to find. One day while listening to a podcast, I heard about Green Chef. The meal option sounded good, and they delivered on Wednesdays. Price was not great, but I did have a decent discount to at least make it reasonable to try.

Quick Stir Fry

I am always looking for new and quick lunch ideas. Well we eat out every single Thursday due to Melody’s standing food therapy appointment. I get really tired of eating out at the same place every week. Especially since they have such a limited menu. So one week I only got their grilled chicken tenders, then I came home and whipped up a quick and delicious stir fry. I bought some frozen chicken too to have on hand to use when we don’t eat out.

Bellpepper Egg Salad Boats

I love egg salad, but I have never found a great recipe to make my own. I have tried, but it is either too dry or too much mayonnaise. I also don’t care for egg salad on bread. I mean it is ok, but I really like it on salad. I get it often from Chicken Salad Chick. I saw this egg salad recipe on Instagram, and the user also used bell peppers instead of bread or salad. I decided to give it a try. It has become new item added to my weekly lunch rotations. It is super quick to make (and prep), and it is really healthy.

English Muffin Pizzas

So I make these pizzas on just about anything when I have all the ingredients (today is English Muffins). And let’s be real, I almost ALWAYS have the ingredients on hand considering they are frequent BOGOs at Publix, ha!

Garlic Bread Pizza

So lately I have been trying to make cheap and easy lunches. So these are by far not the healthiest, ha. However they are probably better than some of the frozen meals you can buy. All three ingredients are often BOGOs at Publix which make it a really great deal.

Tuna Salad

Tuna salad can be so hit or miss with me. I went through phases of eating it a lot backed when I worked in an office, to now rarely eating it because I am so much pickier about how it is fixed. Back during my office days, I would eat it straight out of a packet on a bed of lettuce. Not now. Now I want to use the food processor and make it more of a dip. But most days I am too lazy for this, and I have never found a recipe I loved. Well I finally made one I really liked. I don’t love it, and I would likely use less mayo next time, but it was worthy of sharing.

Zucchini Pizza

So a friend of mine posted this recipe on her social media a few weeks ago. It looked so good, I knew we had to try it. We absolutely love it, and we make it most weekends for lunch. It’s super easy and healthy too!

Prepping Work Lunches

Brad was diagnosed with Type 2 Diabetes back in December.  He was basically told that he needed to eat more frequently (and better, of course) to better maintain his blood sugar.  We were able to adjust to this during December because he was off of work for most of the month.  However, when he went back to work, it turned out to be a huge adjustment.  We found our method for packing his lunches that we used in the past would not work.  It was very last minute and unorganized for the most part.  I would pack as many non-perishables as I could in his lunch box, then he would pack all the cold things the next morning.  This seems easy enough, but now there was much more he needed to include.  Here is what I did:

Sandwich Cutters

A few years ago, I found some really neat Star Wars sandwich cutters, and I bought them for Brad for Christmas.  We are still on the look out for any cute sandwich cutters to use for his lunches.  We actually found some Disney ones at Walmart.  I don't do this for every lunch, but it is a nice surprise for him to get on occasion.  Below are the sandwich cutters we currently have and the outcome.  FYI-they can also be used as cookie cutters!
