Chicken Lettuce Wraps
I found these wraps in the Noom app way back when I was doing Noom. I did make some adjustments to their recipe to better fit what I had on hand and what I prefer (I am not a mushroom fan for instance).
Ingredients
Package of instant rice (I use the 90 second microwave pack from Walmart)
1 tablespoon minced ginger
6 cloves of minced garlic
8 oz of ground chicken
Bibb lettuce
Bell Pepper (I did a trimix)
1 tablespoon soy sauce
1 teaspoon brown sugar
1 jalapeño
1 tablespoon lime juice
Instructions
1. Mix the garlic, ginger and ground chicken together. Add to a skillet over medium heat. Cook until down (around 5-7 minutes).
2. While the chicken cooks, cook rice according to the package. Set aside. Then dice the bell pepper and jalapeño. Lastly, whisk together the soy sauce, brown sugar, and lime juice until the sugar is dissolved.
3. Once the chicken is cooked, transfer to a bowl. Add the soy sauce mixture to the chicken and mix together.
4. Return the skillet used to make the chicken back to the stove. Sauté the peppers and jalapeño for around a minute or so. Add to the chicken mixture and mix.
5. Now assemble the wraps and serve!
