Chicken and Bacon Potatoes

I found this recipe in the Family Circle magazine.  It is from the April 2016 issue, but I didn't make it until recently.  I got really behind on reading the magazines (ha!).  Anyhow, this recipe looked really fascinating and easy.  It really was easy to make, and it was really good.  I will definitely be making this one again!

Ingredients

  • 2 potatoes (or one per person)
  • 1/2 a cup of milk
  • 2 oz of cream cheese
  • 1/4 cup of crumbled feta cheese
  • 2 green onions
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of oregano 
  • 1/4 teaspoon of pepper
  • 1 cooked chicken breast
  • 6 slices of chopped cooked bacon

Instructions

1. Bake the potatoes until tender.  I baked them, but you could microwave them.

2. Remove the potatoes and cut them in half lengthwise.  Scoop out the inside of the potato into a mixing bowl leaving the skin of the potatoes intact.

3. Add the milk and mash.

4. Add the cream cheese and as much feta as you prefer.  I added about 1/4 a cup.  Also add green onion, salt, oregano, and pepper.  Continue to mash.

5. Add the chicken and 2 slices of bacon and mix with a spoon.

6. Place the potato skins on a baking sheet.  Spoon in the mixture evenly.  Top with feta cheese and the rest of the bacon.  Bake for 20 minutes on 400.

6. Remove from the oven and serve!  We ate it along side bread.
