Brussel Sprouts

So I am weird and LOVE brussel sprouts.  Brad always tells me how much he hates them.  Well for Mother's Day him and Melody gave me the new Magnolia Table cookbook.  In it was a yummy sounding recipe that Brad agreed to try.  I have recently found out I have a pork allergy, so I did use turkey bacon instead of regular bacon.  I didn't care for the turkey bacon in this dish, so next time I would leave it out.  But I am certain regular bacon would be amazing in it.  I also adjusted the recipe a lot for what we like.  So below is MY version.

Ingredients

  • Around 2 pounds of brussel sprouts halved (I bought them frozen and let the thaw before cutting)
  • 2 tablespoons of EVOO
  • 1 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 5-6 slices of bacon (more or less depending on your love for bacon)

Instructions

1. Cook bacon according to your preference, but you want it crispy.  Then chop it.

2. Cut the brussel sprouts in half and place them in a bowl.

3. Toss the brussel sprouts with the EVOO, salt and pepper.

4. Arrange on a rimmed baking sheet face cut side down.  Roast for 30 minutes on 400.  Be sure and shake the pan occasionally.

5. Transfer the brussel sprouts to a serving bowl and mix the bacon with it.

6. Serve!
